Autumn Apple N’Oatmeal

Its that time of year where I sleep in sweaters, furry socks, & a plethora of hand-knitted blankets. We live in a hundred year old apartment, and while the large windows and small details make my home feel so charming, it is inevitably very cold on the second floor. Since my transition into a paleo-leaning diet, I have not really noticed the absence of oats in my life. Now that the weather is colder, I’m moving away from my morning smoothies and switching to hot elixirs, warm eggs, and yes- n’oatmeal. Resembling the taste of a warm apple cobbler, this simple recipe is also grain free, paleo, & vegan. This warming porridge has the taste & texture of the classic oatmeal you love, while being high in protein & fiber. Leftovers can be served hot or cold!


Autumn Apple N’Oatmeal

Makes 1 large serving or 2 small servings.

Ingredients

3-4 apples & pears

1 cup canned coconut milk

1 tsp lemon juice

1/2 tsp vanilla extract

1/2 tsp cardamom

1/2 tsp nutmeg

1/4 tsp ground ginger

1 tsp cinnamon

Pinch of pink sea salt

3 tbsp ground flaxseed

3 tbsp hemp hearts

1-2 tbsp chia seeds

Optional Toppings:

Toasted pecans or almonds

Dried cranberries

Coconut flakes


Instructions

  1. Chop your apples & pears into small, bitesize pieces. You can leave the skin on or peel them — judgement call.
  2. In a small saucepan, bring pears, apples, seasonings, lemon juice & coconut milk to a low boil, stirring occasionally.  Turn heat down to low & allow mixture to simmer, covered, until apples become soft.
  3.  Add flaxseed, hemp hearts, & chia seeds. Continue to cook on low heat until mixture thickens, stirring occasionally.
  4. Serve warm, top with dried cranberries, toasted pecans, and coconut flakes.
